Coco Curry Paleo Recipe
Variety is the spice of life! If you are looking to add some delicious spice to your morning try this tasty recipe adapted from everydaypaleo.Coco Curry Breakfast Frittata
- 7 large eggs
- ½ finely diced red onion,
- 2 cups fresh chopped spinach,
- ¼ cup coconut milk
- 1 tbsp curry powder
- 1 tbsp coconut oil
- 2 tbsp tomato paste
- Sea salt
Whisk eggs, coconut milk, curry powder, sea salt (to taste) and tomato paste together in a bowl. Warm coconut oil in a 10″ skillet and add the diced red onions. Cook onions until they carmaelize.Add the chopped spinach to the skillet and spread onions and spinach evenly. Poor the whisked mixture into and the skillet and cover. Cook at medium-low heat for four minutes. Place in oven under the broiler without the cover and heat for 3 additional minutes until the frittata is completely cooked through. Why does a doctor tell someone they have to eat a diabetic diet? I do not understand that. I have heard of this before and when I asked my doctor about it he told me there was no reason to put me on a diabetic diet. Because the moment I was diagnosed with diabetes I changed my eating habits entirely. SO a diet was not necessary. It was not as hard as you might think actually.
I cut out all white food. Flour, white bread, potatoes, tortillas…that sort of thing. If it was white I did not eat it. I used wheat flour to replace white. I use beans instead of rice and sweet potatoes instead of white potatoes. And of course wheat bread instead of white bread. Just doing that and making sure I walk one time a day minimum, it brought my sugar back to reasonable levels. And that made me and my doctor happy.

My girlfriend has the flu at the moment and that means that she is laid up in bed feeling very sorry for herself indeed.
